A Summer Recipe: Kale Smoothies!

Breakfast at Miriam’s is the most important meal of the day. In many cases, it is the only nutritious meal our guests will enjoy in the next 24 hours.

With summer’s bounty on the brink (we received a donation of nectarines yesterday!) and temperatures rising, we decided to share with you our refreshing and nutritious Strawberry-Nectarine-Kale breakfast smoothie recipe.

A quick note about kale….did you know that a cup of kale is good for an estimated 130 percent of the daily recommended allowance of vitamins A and C? That makes it an ideal menu item for our guests.

(And if you think our guests wouldn’t be into the idea of kale smoothies, think again! Since we first started serving them, kale smoothies have steadily grown more and more popular in our dining room!)

Yield: Two 12 oz. smoothies

1 cup ice½ cup Greek yogurt (unsweetened plain)
¼+ cup water
2 nectarines (pitted, unpeeled)
2 large leaves of kale (any type of kale or chard will work)
6 strawberries (stems removed, optional)
2 T. honey
½ T. fresh ginger, grated
¼ T. cinnamon (optional)

Add all ingredients to blender and puree until smooth – add more water or ice for desired thickness.

Make one for yourself, then come join us for a breakfast shift and we’ll ask you to make 148 more of them! 🙂
